As I was venturing through the produce aisle this week, Swiss Chard was on sale. This leafy green is a nutritional powerhouse and an excellent source of Vitamin A, C, potassium and fiber, and is low in calories but provides more than 300% Vitamin K per serving! Paired with sweet smelling leeks, tomatoes, and protein packed chickpeas, this stew will have your family asking for more! ENJOY!
Ingredients:
5 cloves garlic
2 Tbs olive oil
1/2 large sweet onion
1 Leek (sliced)
1 Tbs Cumin
1 tsp Cayenne
6 Large leaves swiss chard
3 cups Low-sodium Chicken Broth
1 can (14 oz) no-salt added diced tomatoes
1 can (16 oz) chickpeas (rinsed)
1 cup water
Salt/pepper to taste
Directions:
Chop all ingredients. Pull leaves from the step of swiss chard and set aside. Pull apart leaves into small pieces with hands
In a large soup pan, saute garlic, onion, and spices 3 minutes or until translucent.
Add swiss chard stems and leeks an additional 3 minutes
Add the rest of ingredients and bring to a simmer for 30-40 minutes, adding additional salt/pepper to taste.
